Original Question
Person A makes claim X. Person B provides evidence Y against claim X. Person A presents a modified version of claim X that doesn't conflict with evidence Y. Person B accepts the new version of claim X. Person A now continues as if the original version of claim X is the accepted version.

Thanks in advance, it's been driving me nuts!

It's basically Moving the Goalposts . It is fallacious for the person A to change the argument without acknowledging the defeat, and it is fallacious for person B to accept the evidence for the changed argument.
